  • 113 cups 325 ml canned, unsweetened coconut milk
  • 3 oz. 85 g frozen blueberries or fresh blueberries
  • 1 tbsp 1 tbsp lemon juice
  • ½ tsp ½ tsp vanilla extract

Making low carb simple

Instructions

  1. Place all ingredients in a blender and mix until smooth.

  2. Taste, and add more lemon juice if desired.

Tip from our Dietitian

If enjoying this smoothie for breakfast, we recommend increasing the protein for a more filling and nutritious meal.

If you tolerate dairy, replace the coconut milk with greek yogurt and add 2 tbsp whey protein isolate per serving. Add some water for a runnier consistency if needed.

If you don't eat dairy products, eat a couple of eggs on the side.

    Yes, you can substitute.
    Unsweetened almond milk
    1g carb
    1g protein
    2.5g fat

    Unsweetened coconut milk
    1g carb
    0g protein
    4g fat

    Those are for 1 cup serving, Silk brand.

    Yes, there are different kinds. Use one that is unsweetened and I hope you'll find one you like. The cans we use are 400 ml (about 13 fl.oz).

    So you can use almond milk for the smoothie, blueberries. What other fruit can be used. I cannot use dairy alergic so have to be careful. I find it hard to find recipes with out cheese in , can you suggest any dairy free options i dont like to eat alot of meat i go off alot of things im a really fussy eater. Would appreciate some guidance ..thankyou Dawn

    Yes, you can use almond milk. You can also use any berry you prefer. Most other fruit will be too high carb. You can use the recipe search tools to filter for dairy free recipes.

    The nutritional info on this recipe seems way off. When I enter it into CM it has way more carbs, way less fat and way less calories. How are you getting 43 g of fat out of 7 oz of coconut milk? Did you leave out an ingredient?

    The keto diet sounds similar to the high protein diets from the early 80's. I lost a lot of weight on one of those diets - it was fantastic. Of course as soon as I went off the diet I gained even more weight than I had lost. Not related to the diet, but I now have a plethora of food allergies... Almonds, all dairy, avocados, all eggs, beef, mushrooms.... So the keto diet looks great, but how can I substitute for my sensitivities? You even use almond flour and almond milk.... I can't tolerate them. Should I simply give up?

    There are substitutions for these ingredients, or you can find different recipes. Coconut milk is a good substitute for almond milk.

    Different locations and brands may call the same product by different names. If the coconut milk is low fat, try coconut cream instead.

    The one we use has 42 grams of fat, 4 grams protein, and 6 grams of carbs for the entire amount of coconut milk.
